Homemade Matcha Semi-freddo

I made this Matcha Semi-freddo last summer.  I posted a photo on social media and asked what to name it.  I got some replies and I decided to name it Matcha semi-freddo to be simple and short.

In case you are new to Matcha, check out the health benefit from here.  Even Kitk*t launched a Matcha flavour chocolate, but if you have pure Matcha green tea powder, you can make yummy healthy dessert.

Do you like cold desserts in summer?

I love icy cold desserts in summer like many other people who live in a country with hot days.  I like to freeze many fruits such as bananas, orange, pineapples, melons, mangos, and berries and eat it frozen.  I used to do it in Japan in summer and also here in Malta.  My kids like it too but it was funny to find out that not everyone likes to do it.  For example, my husband is brought up in a cooler place and therefore he finds it difficult to finish any frozen foods.

 

How I came up with this Matcha Semi-freddo

I had a recipe of Japanese Matcha cheese cake and I froze it to make it semi-freddo without gelatin.  It’s not as creamy as semi-freddo but it is more icy and it also has a fresh sweet sourness from the yogurt.  Matcha’s flavour matches the yogurt so you can even just add a bit of Matcha green tea powder to some natural yogurt with honey or maple syrup.  This makes a hassle free healthy dessert.

 

Good thing about the Matcha semi-freddo is after they are frozen, you can take them out from their moulds and put them in an air-tight container.  Whenever you feel like it, you can take one out of the freezer, leave it  a bit out and eat it 🙂

 

Health benefits of Yogurt

Yogurt is a great source of probiotics for a healthy gut and I was wondering whether the healthy bacteria dies after freezing it.  I googled it quickly and it seems that most of them would not (source).  Did you know that eating yogurt after a meal is better than eating it as a snack?  The reason is that when your stomach is full, the healthy bacteria goes to the intestine easily.  When your stomach is empty, the acid of stomach kill the good bacteria.  Yogurt is healthy, read from here if you would like to check the health benefits.

Matcha-Semi-freddo

Here is the recipe!

All the ingredients are available in a vegan version so you can opt for your favorite type of milk, cream cheese and heavy cream as well as sugar.

Ingredients for 12 muffin cups

<bottom part>

  • Biscuits: 40g
  • Melted butter 70g
  • 1 tbsp of milk of your choice

<Top part>

  • Cream cheese 200g
  • Sugar 60g
  • Natural yogurt 200g
  • Fresh cream 250 ml
  • Matcha Green Tea Powder 1-2 tbsp (adjust according to your liking)

Method

  1. Place the cookies in a freezer bag and crash them with a wooden roller or hammer (you can crash it in a food processor too)
  2. Add the melted butter and milk and mix it
  3. Put it evenly in the moulds and press it down.
  4. Put the cream cheese in a bowl, add the sugar and stir it with a whisker.
  5. Add the yogurt and mix
  6. Add the fresh cream and stir
  7. To make two layers, put 2/3 of the mixture in the moulds and freeze them for about 10 minutes.
  8. Add Matcha green tea powder by using a sifter to the rest of the mixture and stir it well until it is evenly mixed and the lumps disappear.  Adjust the amount of Matcha green tea powder to your liking.  You can see from the green colour, light green – light Matcha taste.
  9. Add <8> over the white layer and freeze it again
  10. I like to freeze them totally then place them on a plate for a few minutes to defrost, so that they are easier to eat.
